Greek Chortopita (Green Vegetable Pie)

~ Ingredients:
 
~ 1 bunch of fresh spinach
~ 1 bunch of fresh romaine lettuce
~ 1 bunch of fresh green leaf lettuce
~ 1 bunch of parsley
~ 1 bunch of dill
~ 3 green onions
~ 2-3 leek
~ 2 zucchini
~ 500 ml of crumbled fetta cheese
~ 1 pack of fillo
~ 3 eggs
~ 1 cup of corn oil
~ 1/2 a cup of corn flour
~ Salt and pepper to taste

~ Wash the vegetables well and let them dry.
~ Fine chop the vegetables and place in a large bawl.
~ Add 1/2 a cup of oil, beaten eggs, fetta cheese, corn flour and salt and pepper to taste.
~ Mix the well so all the ingredients go everywhere on the vegetables.
~ With a pastry brush oil the baking pan, bottom and sides.
~ Place one fillo sheet on the bottom and with the brush oil the top. (Do not cut the excess)
~ Using the same method add three more fillo sheets (oil each one).
~ Add a layer of vegetables and spread to go even everywhere.
~ Add another fillo sheet, vegetables, fillo sheet vegetables and so on until there is no more vegetables.
~ Add four fillo sheets on top, oiling each one.
~ Fold the excess fillo towards the center and oil the top fillo sheet.
~ Bake in a preheated oven to 350 degrees for 50-60 minutes or until golden brown.
~ Take out of the oven, let cool a little bit, cut in diamond or square pieces and serve.
~ Chortopita can be eaten hot or cold.
~ Chortopita can be served as a side dish or as an appetizer.
