Keftethakia (Greek Meatballs)

| ~ Ingredients: ~ 1 kilo of minced meat ~ 1 large potato grated ~ 1/2 a cup of breadcrumbs ~ 1 large onion finely chopped ~ 3 clove of garlic finely chopped ~ 1/4 bunch of finely chopped parsley ~ 2 eggs lightly beaten ~ 1 tsp of dry mint (optional) ~ 1/2 a cup of olive oil or more ~ Salt and pepper to taste |

| ~ In a large bowl place all ingredients (except from the oil) and knead well until they are all mixed. ~ Cover your mixture and place in the fridge for about an hour. ~ Take your mixture out of the fridge and using a tbsp, take a tablespoonful of mixture and shape in a small ball. ~ The more experienced cooks use there fingers. ~ Heat up the oil and fry your Keftethakia all over until they are cooked and browned. ~ In a platter place some paper towel and put your cooked Keftethakia to absorb the excess oil. ~ Serve hot with some French fries or Mash potatoes or even some rice pilaf (Risotto). ~ Keftethakia can also be eaten cold and as an appetizer (hot or cold). ~ Good luck and Bon Appétit. |
