Kolokithia me Avga (Fried Zucchini with Eggs)

~ Ingredients:

~ 1 kilo of fresh zucchini
~ 4-6 eggs
~ 1/4 cup of olive oil
~ Fetta cheese
~ Salt and pepper to taste
 
 
   

 

~ Wash zucchini well under plenty of running water.
~ Slice zucchini in thin slices about 5 mm thick.
~ Heat up the oil in a frying pan large enough to hold all the sliced zucchini.
~ Lower the heat to medium and add the zucchini in the hot oil.
~ Spread it out so there are as many slices in the hot oil.
~ Allow a few minutes to fry on one side and then turn them over to fry on the other side as well.
~ Do not turn over too often because the zucchini as it gets cooked it gets softer and it will break and mush.
~ I n the other hand you don’t have to let them burn.
~ When they are cooked on both sides and they have a brown color, remove the excess oil from the pan.
~ Add as mush crumpled fetta cheese you like, salt and pepper to taste.
~ Beat 4-6 egg and pour over the fried zucchini.
~ Make sure that zucchini and eggs mix and cooked.
~ Transfer to a platter and serve hot.
~ Kolokithia me Avga (Fried Zucchini with Eggs) can easily be accompanied with a nice Greek Salad.
