Kotopoulo Kaourmas (Chicken Casserole)

| ~ Ingredients: ~ 1 Medium chicken cut in quarters ~ 6-8 peeled potatoes cut in quarters ~ 2-3 zucchini cut in 3 pieces each ~ 5-10 whole small onions ~ 1/2 cup of olive oil ~ 1 cup of white dry wine ~ 1 cup of hot water ~ 2-3 ripe tomatoes cut ~ 1 1/2 tbsp of tomato paste ~ 1-2 bay leafs ~ Salt and Pepper to taste |

| ~ Heat the olive oil in a casserole and fry the chicken to light brown on both sites. ~ Remove the chicken and sauté the onions for about 3 minutes while stirring. ~ Remove the onions and do the same with the potatoes and the zucchini. ~ After you sauté the chicken, onions, potatoes and zucchini put everything back in the casserole mix them up and add the wine. ~ Bring to boil and add the rest of the ingredients. ~ When it comes to boil, reduce the heat, cover the casserole and simmer for about 45 minutes. ~ At this point the sauce should be thickened and you food should be ready to serve. ~ Serve hot with a glass of red dry wine. ~ Good luck and enjoy. |
