~ Saganaki is what a lot of people know it as OPA (Flaming Cheese).
~ OPA in Greek is just an expression of joy and not the name of the food.
~ Saganaki is made out of Greek cheeses imported directly from Greece.
~ It can be found at all Greek importing product companies and at the majority of Greek stores.
~ There are two kinds of cheeses that can be used to make Saganaki.
~ One is called Kaseri and the other one is Kefalograviera.
~ In Cyprus, for Saganaki, the local cheese is being used called Halloumi.
~ It is a matter of preference of which cheese people like using.
~ One is a little milder than the other.
~ At some Greek restaurants, other types of Saganaki are being offered like Greek Sausage Saganaki, or even Shrimp Saganaki.
~ Saganaki is either fried or broiled.
~ Fried Saganaki, some people or restaurants use egg and flower and some don’t.
~ Again it is a matter of preference.
~ In this recipe we will use the egg and flour.
~ To make Saganaki you will need:
~ To prepare the cheese for frying, wet it with water and deep it in the flour making sure the flour is everywhere on the cheese.
~ Then deep it in the beaten egg, again making sure that the egg is everywhere on the cheese.
~ Put some olive oil in a frying pan, enough to cover the bottom of the pan and let it warm up.
~ Lower the heat and put the cheese in it.
~ Fry it on one side until is nice and golden, turn it over until is the same and the cheese is soft.
~ Place in dish, pour the brandy over it and set it on fire.
~ Always making sure not to burn anybody or anything.
~ Squeeze the lemon over it and OPA,bon appétit.
~ Saganaki is always accompanied with Greek pita bread.
